Too runny, what should I add more off? This is third time I’ve made it the others were perfect.
Hi Ross, I would say that you probably added too little oil or a bit too much of the chickpea water or white wine vinegar this time. Sometimes recipes like this can take a little experimenting with, but 2 out of 3 ain’t bad!

Did you ever get to the bottom of that? I have made 4 batches of this mayo and it’s been perfect then just made some exactly the same way and it won’t thicken at all! I blamed the chickpea water so tried another brand and still no joy. I was using a different brand vegetable oil so wondered if it could be that? Thought they would all be the same but only think I can think of!
I had the same problem, made mayo from this recipe once and it was perfect, then wanted to make it again and it was runny, I used the same blender and the same quantity of everything. So weird

maybe a solution to your ‘too runny’ mayo is the blender/blender setting you used. My mayo was always perfect, then stopped working. turns out it was the blender. mayo doesnt like to be blended to fast and vigorously.
came out just perfect. Just like the real thing.
