Raw Zucchini Lasagna
This raw lasagna is surprisingly rich, refreshing and delicious. And it takes very little time to prepare. Perfect for summer evenings.Preparation Time: 30 – 40 Minutes
- 2 zucchini sliced
- 300g tofu
- 50 spinach
- 3 tbsp tomato pesto
- 10 tomatoes
- 30g sunflower seeds
- Black pepper
- Nutritional yeast to sprinkle
Slice the zucchini on a mandolin or any kind of slicer.
In a food processor beat 200g tofu with the tomato, salt and black pepper and set aside.
