Vegetable Soup

Is there anything more comforting than a bowl of hot soup on a gloomy rainy day? This soup is rich and delicious, ideal as a starter or a light meal. Try garlic bread as a perfect accompaniment.

Preparation Time: 35 minutes

Ingredients

  • 1 onion chopped
  • 1 tablespoon olive oil
  • 120g cauliflower
  • 120g broccoli
  • 250g carrots sliced
  • 120g leek sliced
  • 10 cherry tomatoes
  • 1 vegetable cube
  • 10g parsley
  • 1 1/2 litres water
  • Black pepper
  • Salt

Preparation:

Sauté the onion in the oil.
Add the rest of the ingredients, apart from the water and tomatoes, and cook for 10 minutes.
Add the boiling water and cook for a further 15 minutes.

Turn the hob off, add the tomatoes and blend the ingredient in a blender or with a hand blender.
Serve and enjoy.
